Chinese Stir-Fry Shrimp with Snow Peas

Ingredients:

– 2/3 lb. tiger prawns (fresh)
– 1/2 cup vegetable oil
– 1 clove garlic, pressed or minced
– 1/4 teaspoon salt
– 1/2 lb. snow peas



Marinade for make the shrimp crunchy:
– 1 1/2 teaspoon sherry
– 1/2 teaspoon salt
– 1/2 teaspoon grated ginger
– 1 1/2 teaspoon cornstarch
– 1 teaspoon water

Seasoning:
– 1 tablespoon chicken broth
– 3 tablespoons water
– 1/2 teaspoon cornstarch
– 3 tablespoon oyster sauce
– 1 tablespoon hoisin sauce (Chinese dipping sauce)



Directions:

– Peel the shell and de-vein prawns. Massage the shrimp with salt for about a minute. Rinse with cold running water for 5 minutes and pat dry with a paper towel. Combine the rest of marinade in a bowl (can be added with a bit of baking soda). Add prawns and mix well. Let stand for 30-60 minutes.
– Heat wok over medium heat, add oil, and stir-fry garlic for 15 seconds. Add prawns and stir fry until pink on all sides. Remove from wok, and place on plate.
– Add salt and snow peas to oil in wok. Stir-fry for 30 seconds. Add seasoning sauce and stir slightly until it’s thick and boil. Add cooked prawns. Quickly stir a few times to coat everything with sauce. Serve hot with cooked rice.
